General Manager, Concessions

Responsibilities: Manage labor, food, and operating expenses. Develop ideal labor guidelines and assist department staff in setting ideal food costs and other operating expenses. Accountable for managing cash and inventory responsibly and in accordance with Society policies and department standard operating procedures. Develop and implement a performance management program which includes performance observation, evaluation, corrective action, appraisal, and salary management to help facilitate a high performing, productive, and profitable organization. Direct the training and development of staff. Assure compliance with relevant labor law regulations and society policies and department standard operating procedures. Prepare annual operating budget for business unit. Monitor actual performance, identify discrepancies, and implement corrective action in controllable areas. Review current departmental procedures, and make recommendations for new and/or modifications as necessary. Direct the delivery of all products and services to the guests, ensuring quality standards are consistently met. Manage the multiple stages of food delivery including receiving and storage, preparation, display cooking, service, dining experience, and cleanliness. Prepare viable manpower plan including coordinating the recruitment, selection, and hiring of staff. Develop and monitor quality standards for food service, cleanliness, and sanitation. Takes appropriate action to ensure standards are achieved. Assist in the internal and external research of products, services, and trends related to food service operations and make applicable recommendations. Develop new products, recipes, and procedures. Review current and new products, and make recommendations to maximize revenue and cost controls by utilizing culinary technicians, vendor representative, and other available data. Coordinate with Plant & Facilities for the maintenance of equipment and facility. Assist Marketing Department in the development and execution of marketing plan(s) for restaurant enterprise zone and society-wide program and plans including advertising, promotions, special events and in-park meetings. Serve as spokesperson and host in promoting restaurant’s theme and concept. Work with staff of other departments as necessary to achieve integrated objectives. Participate in interdepartmental committees related to Society-wide programs. Other related duties as assigned.
Requirements
Requirements: Bachelor’s degree in business administration, hospitality management or related field, or equivalent combination of training and experience required. Minimum of 5 years food service management experience required. Must be able to obtain and maintain food service sanitation certificates as required by city, county, and state within one year. Must possess strong written and oral communication skills. Must possess strong interpersonal skills. Must represent the Society in a professional manner at all times. Valid driver’s license required. Illinois residents must possess a valid Illinois license within 90 days of hire. Valid out-of-state license required for out-of-state residents. Spanish fluency a plus, but not required. This is a full-time position which routinely includes weekends, holidays, and occasional evening work.
