The Buca Mission is to operate one great restaurant at a time by supporting the ENTREPRENEURAL SPIRIT of our Paisano Partners. Their compensation is tied to the success of not only their restaurant, but the success of the company as a whole. In the same spirit of our Paisano Partners we also have Chef Partners, who make a similar commitment to BUCA, Inc. and are charged with the responsibility of leading our Heart of the House operations at our great neighborhood restaurants.
Our History
The first Buca di Beppo restaurant opened in the basement of an apartment building in downtown Minneapolis in the summer of 1993. By 1996 there were three Buca di Beppo restaurants in Minnesota, one in Milwaukee, WI. and one in Palo Alto, CA. Also at that time BUCA, Inc. was formed as a private corporate entity to support the growth and development of Buca di Beppo restaurants. In the spring of 1998, with 20 Buca di Beppo restaurants in neighborhoods across the United States, BUCA, Inc. went public and began trading its stock on the NASDAQ under the symbol, BUCA. By the end of 2006 the company had grown to 88 Buca di Beppo restaurants with approximately 6,000 family members throughout the country. BUCA, Inc. plans to continue to grow and expand the Buca di Beppo brand domestically.

Buca di Beppo is a collection of neighborhood restaurants that are about serious Italian food, tongue-in-cheek fun and an exceptional value few restaurants can match. Buca di Beppo adds a "personality" to the food and experience delivered to guests. We appeal to a diverse demographic base. Additionally, at Buca di Beppo, we gather all our family members, every day, for family meal, we believe this is a point of difference and helps create our spirit of “Una Famiglia” One Family.
Buca di Beppo restaurant’s food is based on authentic family recipes enjoyed for generations in the villages throughout Italy and then adapted to American ingredients. Our oversized portions, served family-style on small or large platters or as single portions are designed to overwhelm guests with an abundance of high quality food. Our unique environment at Buca di Beppo encourages guests to interact and enjoy the meal together. Most Buca di Beppo restaurant are open for lunch and dinner a few select locations are open for dinner during the week and at noon on Saturday and Sunday.
Though the concept, "feel", and service are consistent throughout each of the restaurants, the buildings are not the same. Our restaurant facilities include locations where we have done complete building renovations, partial remodels and new construction. Mixing prototype construction and fingerprint design allow us to pick from a multitude of locations. In fact, some sites are located in basements of older buildings. In other locations, guests enter through the kitchen. Most of the Buca di Beppo restaurants feature a Pope`s Table that seats 14 to 18 guests, and some locations have a kitchen table for six to eight people right in the midst of our Heart of the House.

Buca di Beppo restaurant's food is based on authentic family recipes enjoyed for generations in the villages of Southern Italy and then adapted to American ingredients. Our oversized portions, served family-style on large platters, are designed to overwhelm guests with an abundance of high quality food. In family-style serving, each item is shared by the entire table, which encourages guests to interact and enjoy the meal together. Each Buca di Beppo restaurant is open for dinner only during the week. We open at noon on Sundays as well as at noon on Saturdays in some locations.
Vinny T's of Boston restaurants are based upon re-creations of the neighborhood Italian eateries prominent in the neighborhoods of lower Manhattan, Brooklyn and South Philadelphia in the 1940's. The menu includes both individual and family-style portions. Vinny T's of Boston is open for both lunch and dinner.

BUCA, Inc. (Nasdaq: BUCA) today announced that Wallace B. Doolin will join the company as chairman of the board, chief executive officer and president. He is expected to assume his duties in early December.
Peter Mihajlov, executive chairman and interim CEO of the company stated, "Wally is a proven leader in our industry and is the perfect choice to lead BUCA and its management team as we move forward. He is a tested, creative executive who’s known in our industry for his clarity of vision, strong brand management strategy capabilities and operations skills."
"BUCA has two wonderful brands with great potential," said Doolin. "I’m excited to work with the board, the management team and the entire BUCA family."
A hospitality industry leader for many years, Doolin recently resigned as chief executive officer of La Madeleine French Bakery and Café, a 62-restaurant chain which he helped reengineer, reposition the brand and prepare for its next stage of growth. He will remain a member of the La Madeleine board of directors. Prior to joining La Madeleine in 2002, Doolin served eight years as chief executive officer and president of Carlson Restaurants Worldwide (CRW) and TGI Friday’s (Friday’s). During his more than 13 years with CRW and Friday’s, he oversaw TGI Friday’s growth from 135 U.S. restaurants to more than 700 units in 57 countries. He also was responsible for the acquisition of Pick Up Stix, which brought CRW’s restaurant total to 770. Doolin also served as president of Applebee’s and held senior leadership positions at W.R. Grace’s Restaurant Division, Flakey Jake’s, Inc., and Steak and Ale Restaurants.
Doolin, 58, has received the IFMA Silver Plate and NRN Golden Chain awards. He is a board member of the National Restaurant Association and past chairman of its Education Foundation. He also is active in Share Our Strength, a leading children’s anti-hunger organization
